banh mi-style meatballs

ingredients:
20 oz ground meat (beef, turkey, pork)
.5 c. panko
1 tbsp ponzu sauce
2 cloves of garlic, minced
1 thumbs of ginger, minced
1.5 tsp salt
pepper
2 tbsp soy sauce
3 tbsp hoisin sauce
1 tsp sugar
1 tbsp sriracha
method:
preheat oven to 425 degrees and adjust rack to top position.
combine ground meat, panko, ponzu, garlic, ginger, salt and pepper in a large bowl.
form mixture into 20-24 meatballs and place on a lightly oiled baking sheet.
roast on top rack for 14-16 minutes until cooked through.
combine soy sauce, hoisin sauce, sugar, and sriracha in a bowl. toss meatballs until coated.
serve with sriracha lime mayo.
(1 tbsp sriracha, 4 tbsp mayonnaise, and a squeeze of lime juice)
