nyc chocolate chip cookies

ingredients:


1 c. cold butter, cubed

1 c. brown sugar

.5 c. white sugar

2 eggs

3 c. all purpose flour

1 tsp. cornstarch

.75 tsp. baking soda

.75 tsp. salt

2 c. chocolate chips


method:


heat oven to 410 degrees. i know everyone tells you to do this at the beginning of the recipe. don't do this first or your oven will be on for ages. now its here, at the top, just so you know.


in a large bowl, cream together the cold cubed butter, brown sugar, and white sugar. i tend to cube the butter and stick it back into the fridge while i get all of my other ingredients out and measured so it doesn't get warm. this butter needs to be cold. because the butter is cold, the creaming process takes more time than in other cookie recipes. it's worth it. trust me :)


add the eggs, one at a time. mix well after each addition.


in a medium bowl, whisk together flour, cornstarch, baking soda, and salt.


add dry mix to wet without over mixing. add the chocolate chips. the dough is quite firm at this point.


if you want tall, gooey cookies, you should scoop some out on to a cookie sheet, place the cookie sheet in the fridge for them to cool down, and then bake them for 9 minutes.
