ingredients:
3 c. ap flour
1 tbsp sugar
1 tbsp baking powder
1 tsp salt
.5 tsp baking soda
12 tbsp unsalted butter, cut into small cubes and chilled
1 c buttermilk (milk + 1 tsp of apple cider vinegar)
1 eggs, beaten
*easy to double recipe
method:
preheat oven to 450 degrees.
prepare baking sheet with parchment paper or silicone mat.
in a large bowl, combine flour, sugar, baking powder, salt, and baking soda. whisk well.
cut in butter with a pastry cutter until butter is pea sized.
in a separate bowl whisk together buttermilk and egg.
add mixture to dough, using a fork to combine. bring dough together in bowl using hands. knead and fold to create layers, 8-10 times.
flatten dough with hands to .5" thick, 9" circle. cut dough into 10 biscuits
arrange biscuits on baking sheet and bake for 5 minutes.
reduce oven temperature to 400 degrees for remaining 10-12 minutes.
