mini almond croissants

ingredients:


mini store-bought croissants

1 c. sugar

8 tbsp unsalted butter, melted

2 tsp salt

1.5 c. blanched almond flour

2 large eggs

2 tsp vanilla extract

2 tsp almond extract

.5 c chopped nuts (sliced almonds, chopped pecans, chopped pistachios)


method:


preheat the oven to 350 degrees and prepare a baking sheet with parchment paper.


slice croissants open using and bread knife and set aside.


in a bowl, combine sugar, melted butter, salt, almond flour, eggs, and extracts.


spread frangipane mixture on interior and top of each croissant and place on baking sheet.


top each croissant with nuts.


bake for 20 minutes.
