cajun chicken pasta

ingredients:
4 tbsp olive oil
1 lb of chicken, cut into .5 in pieces
.5 tsp salt
.5 tsp black pepper
14 oz kielbasa, sliced
8 cloves of garlic, minced
1 quart of low-sodium chicken broth
2.5 c. of half and half
1 pound of short pasta, uncooked
1.5-2 tbsp cajun seasoning
(1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, .5 tsp dried oregano, .5 tsp dried parsley, .5 tsp dried thyme, .5 tsp cayenne, and .5 tsp red pepper flakes)
12 oz frozen chopped spinach
4 oz parmesan cheese
method:
in a large, heavy bottomed pan, brown seasoned chicken cubes in olive oil on medium high heat.
add sausage and continue to cook until lightly browned.
stir in garlic and cook for 2 minutes
add chicken broth, half and half, pasta, cajun seasoning, and frozen spinach to pot.
stir together and bring to a simmer on medium high heat.
reduce heat to low and let cook, covered, for 15-20 minutes until pasta is cooked.
remove from heat and stir in parmesan cheese.
