chicken biscuit pie

ingredients:


2 tbsp butter

2 tbsp olive oil

1 sweet onion, diced

2 celery stalks, diced

2 carrots, diced

4 garlic cloves, diced

salt and pepper to taste

2 tsp garlic powder

2 tsp onion powder

1 tsp red pepper flake

1 tsp dried parsley

1 tsp dried thyme

1 tsp dried dill

.25 c. ap flour

1 quart chicken broth

3-4 cooked chicken breasts or thighs, cubed or shredded

12 oz frozen spinach, thawed

1 recipe of biscuits with garlic powder and cheese


method:


in a dutch oven, melt butter and olive oil on a medium high heat.


add in onion, celery, carrots, and garlic.


season and cook until translucent and soft.


sprinkle flour over top and coat cooked vegetables.

cook out flour for 2 minutes on medium heat.


add chicken broth and increase temperature to simmer.

keep stirring out all lumps.


stir in spinach and cooked chicken.


allow filling to cool to room temperature.


prepare biscuit dough with garlic powder and cheese add-ins.


preheat oven to 450 degrees.


place cut biscuits on top of cooled filling.


place dutch oven with biscuits in oven and bake for 5 minutes.


reduce heat to 400 degrees and bake for 10-12 minutes
