chicken enchiladas

chicken ingredients:


3-4 chicken breasts

2 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

.5 tsp cumin

.5 tsp chili powder


chicken method:


combine chicken breasts and seasoning into slow cooker with .25 c. of water.


cook on high for 4 hours.


enchilada ingredients:


prepared chicken, cooled

6 oz of sour cream

8 oz shredded mexican cheese + cheese for topping

8 flour tortillas

1 small can of enchilada sauce, red or green, or salsa


enchilada method:


preheat oven to 375 degrees and get out a 9 x 13 glass baking dish.


in a large bowl, mix cheese, sour cream, and chicken. mixture needs to be fairly moist. taste here for any additional seasoning.


fill each tortilla with 5 tbsp of mixture. roll and place seam side down in glass baking dish.


top with enchilada sauce or salsa and additional cheese.


bake for 15 minutes.
