ingredients:
1.33 c. ap flour
.66 c. corn meal
.66 c. sugar
1 tbsp baking powder
.5 tsp salt
4 tbsp unsalted butter, melted
1.25 c. milk
.25 c. vegetable oil
2 large eggs
.5 c. of add-ins, maximum (frozen corn, diced jalepenos, cheddar cheese)
method:
preheat the oven to 350 degrees and grease a 9x13 in pan or 2 12 count muffin tins.
whisk together the flour, corn meal, sugar, baking powder, and salt.
whisk together the melted butter, milk, oil, and eggs.
pour the liquid ingredients into the dry and stir together with any add-ins.
transfer the batter into the prepared pan or tin and bake for 35-45 minutes.
