chicken satay skewers

ingredients:
16 skewers
16 chicken tenders (~20 oz of chicken)
.25 c. peanut butter
.25 c. sweet thai chili sauce
.25 c. miso paste
2 tbsp ponzu sauce
vegetable oil
salt and pepper to taste
method:
set oven to 425 degrees and position rack to top position.
place skewers in shallow dish and cover with water to soak.
pat chicken dry. season all over with salt and pepper. thread chicken on to skewers.
place chicken on lightly oiled baking sheet and roast on top rack until golden and cooked through. 12-15 minutes.
combine peanut butter, sauces, and paste in a bowl. microwave until warmed. season with salt and pepper. add 1 tsp of water until mixture reaches a drizzling consistency.
in the last 2 minutes of roasting, remove the baking sheet with chicken skewers from oven. brush on a thin layer of sauce. return to oven for remaining minutes to brown.
